Продукти за 4 порции:
 
800 гр. филе от риба
1 клонче седефче
2 клончета чубрица
2 клончета девесил
2 клончета кориандър
20 мл. бяло вино
20 мл. Deftritum (гъст гроздов сироп)
мед, оцет и зехтин
Liquamen (тайландски рибен сос)
Зърна кориандър и черен пипер счукани или смлени в мелничката
Сол и нишесте за сгъстяване
 
 
Приготвяне:
 
Намазваме рибката добре със зехтин и солим. Поръсваме я с черен пипер и смлян кориандър, а след това я печем на барбекю или скара до едно красиво златисто-кафяво.
 
Хвърляме нарязаните подправки в сгорещен зехтин и ги изпотяваме кратко.
 
Гасим с вино и дефритум, разбъркваме и ги оставяме малко да побълбукат.
 
Овкусяваме предпазливо с мед, пипер, оцет и ликвамен и сгъстяваме с нишестето.
 
Тъй като горните количества понякога не са зададени, започвам винаги с една лъжица мед от начало. Останалото добавям след това едно по едно и малко по малко като постоянно опитвам вкуса, докато накрая или не хвърля всичко в кошчето за боклук или не се получи точно така като трябва.
