Apicius III, 6, 3
Превод: Пипер, див джоджен (бласкун)(mentha pulegium), мед или Passum, рибен сос и оцет, понякога се слага и Silphium.
Продукти за 4 порции:
1 краставица
1 клонче мента
1 ч.л. мед или 3 ч.л. Passum (вино със стафиди)
1 с.л. Liquamen (или тайландски рибен сос)
1 ч.л. винен оцет,
черен пипер на вкус
щипка асант
от мен допълнително:
2 ч.л. зехтин и малко вода
1/2 глава лук
2 клончета магданоз
Приготвяне:
Нарязваме краставицата на тънки шайби, а лукът и подправките на ситно.
Приготвяме дресинга с мед или пасаум, зехтин, оцет, ликвамен лука и подправките като опитваме постоянно. Лукът не е в рецептата , но се вписва идеално.
Изливаме го върху наразаната краставица и ръсим отново с пипер.
Снимаме всичко старателно и оставяме малко да поеме преди сервиране.
