5.2 Предястие с лук

GVSTVM DE BVLBOS
Apicius IV, 5,2

Превод: Предястие от зеленчуци: Овкуси лук с liquamen, зехтин и вино. Щом се сварят, черен дроб от прасенце и от пилета и свински джолан и разчупени пъдпъдъци: това всичко трябва да ври с лука. Щом заври, вземи черен пипер, девесил, сипи liquamen, вино и pasum, за да се подслади, сипи от собствения сос и го сипи пак върху лука. Като заври, сгъсти веднага с нишесте.

Продукти за 4 порции:

4 средно големи глави лук
500 гр. свински дроб
1 клонче девесил
50 мл полусухо вино
20 мл Passum (вино със стафиди)
счукан или смлян черен пипер и кориандър
сол, зехтин
Liquamen (или тайландски рибен сос)
малко брашно или нишисте за сгъстяване на сосчето

Приготвяне:

Ето и моя скромен, съкратен вариант:
Наръсваме дробчето със сол, черен пипер и кориандър, пържим го в зехтина и го изваждаме.
В същата мазнина слагаме на сатно нарязаните лук и девесил, поливаме с виното и ликвамен, и задушаваме до омекване.
Връщаме в тигана отново дробчето, закръгляме вкуса с черен пипер, liquamen и пасум, оставяме отново да заври и накрая сгъстяваме с нишестето.
