Превод: Изпържи охлювите в чиста сол и олио. Полей ги с laser, liquamen, пипер и олио.

Продукти за 4 порции:

24 охлюва
1/4 ч.л. сол
2 с.л. от най-добрия зехтин
1/2 ситно нарязана попарена глава лук и 1/2 скилидка чесън вместо laser
1 с.л. рибен сос вместо liquamen
щипка счукан или смлян черен пипер

Приготвяне:

Така и направих. Запържих ги, полях ги със сосчето, поразбърках ги малко преди да ги сваля от огъня, а после ги изядох. Не очаквах кой зане колко от този експеримент, но изненадата беше наистина доста приятна.
Вече бях писал някъде, че този laser вече го няма. Предполага се, че е имал вкус на стар чесън и затова го замествам понякога с мечи лук, а други ентусиасти пък варен кромид слагат.
Този път взех не само и двете, а и половин скилидка ситно нарязан истински чесън.
И тъй като декорацията ми беше от девисил, съвсем случайно открих, че и той на това място се вписва идеално.

COCLEAS LACTE PASTAS
(Угоени oхлюви с мляко)
Apicius VII, 18, 1

Вземи охлюви, подсуши ги и им махни мембраната за да могат да излязат.
Сложи ги първия ден в мляко и сол, а на следните дни само в мляко и махай всеки на час торта.
Щом са угоени така, че да не могат да се скрият, изпържи ги в олио. Прибави oenogarum.
Подобно могат да бъдат угоени и с каша.

PS. от Драго
Ако сте наистина толкова невежи като мен, с удоволствие ще ви спестя голямото ровене в латинските речници.
Oenogarum е смес от liquamen (рибен сос) и вино. Т.е. един вид pasum който пък сега няма да обяснявам.
